Here's a simple recipe for my favorite Red Drum Fish Tacos:
- 1 lb red drum fish, cut into small chunks
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1 tbsp olive oil
- 8 corn tortillas
- Shredded cabbage or lettuce
- Lime wedges
- Mango Salsa
- Hot Sauce
- Guacamole
- Sour Cream
Directions:
- In a small bowl, mix together chili powder, cumin, garlic powder, salt, and pepper.
- Heat olive oil in a pan over medium-high heat.
- Add fish chunks to the pan and sprinkle with spice mixture. Cook for 3-4 minutes per side, or until fish is cooked through.
- Heat tortillas in a dry pan or on a griddle.
- Assemble tacos by placing fish chunks in the center of each tortilla, and topping with shredded cabbage or lettuce, lime wedges, mango salsa, hot sauce, guacamole, and sour cream
